I'd say that the Frankish part of France isn't Germano-Latin, it's fully Frankish German. The Lombardian part would be Germano-Latin since that part was actually conquered by the Romans (and the Lombards were a Germanic tribe), and the Aquitaine part (assuming that it was Celtic, since thats what the Aquitanian tribe was), would be Celtic-Latin.
