So is there kind of an accepted back story as to why there are humans on multiple planets that we'd agree on?

The human body works. It's why we overran earth and it might be why evolution picked it as the most suitable shape for multiple planets.
Humanoids are most efficient form.
That's why reaper master (original) form resembles humans with red chitinous skin.
There's so much for variation;
Though other forms of the sentient life exists, but humanoids are most efficient at work and warfare ; Race of different shapes often have entire different purpose in life and philosophy than their humanoid counterparts.
