The server usually doesn't lag, but since the 1.7.3 update people have been able to fly through unloaded chunks (for the most part, it kicks you sometimes).
This causes lag - not the server location.

I joined this server for the first time in ages, and currently I'm confused as fuck.
I had been working on an underground project and had put up sevreal signs on a wall listing the important tasks. Aparently the most important task was "check a note to get a safe shelf". There was also a 2x1 hole in the wall covered with obsidian that lead to a large cavern with craters everywhere and TNT strewn about, which I never remember doing.
I also checked and double checked the entrance and everything is sealed in place and all traps are functional.
I've decided to join. lets see how long I can last by my self.

Thats because it's already been generated. You have to go to ungenerated land to get tall grass.
By the way, apparently zombe flying is disabled, so the flyhackers are doing something else.

use bonemeal on grass or make a fishing pole and go fishing

If you mean the plugin to disable flying, it has been removed when the server updated to 1.7.3 so now, everybody can fly with zombe's mod or any other flyhack.
