Because the pyro has to taunt in pain sight, he totally can't just hide to taunt and then enter a room and destroy everything.

This. The pyro is balanced around being an ambush class (even though it has become more of a combo class over time) so it's not that hard for him to take a group of enemies by surprise, and this coupled with the crits make the plog strong. Now saying the phlog is op? that's a little extreme. let's say it's a viable weapon.
The phlo is a pure ambush weapon. (Op ? A little.)

Tank sentries with the phlogistinator? You do know that the damage reduction only happens during the taunt and crits don't affect buildings.
You could just tank it with the default flamethrower.
I play with the phlosignator as I call it "Pro"- or more "Less 'Noobish'".
Phlosignator+Manmelter+Powerjack OR Homewrecker.
The tactic actually takes some skills, because during taunt you are vournable for spies, and loadsapeople might decide to aim on your and as soon as the taunt is gone kill you instantly.
First fill it up. I often use the manmelter and just gain it on snipers, or finding a Dead Ringer spy (If you M1 a dead ringer spy while he is cloaked you fill up before the cloak is fully gone)
Then I wait, either to get low HP and use it as a heal, or, during payload I wait for the cart to pass before taunting, jumping down and slaughtering.

I was thinking that "Archimedes" was the song when Medic comes out of the door with the angelic voices, and I was about to agree with you, as that song in all honesty doesn't fit at all for menu music.
But then I saw that Archimedes is the awesome song with the accordion and the clarinet.

Obligatory defence: it's a support rifle designed to help your teammates take down a enemy rather than by overwhelming damage.

Definition of a "sniper" - A sniper is a highly trained marksman who shoots targets from concealed positions or distances exceeding the capabilities of regular personnel. Snipers typically have specialized training and distinct high-precision rifles.
Nowhere in there does it say he needs to pull of headshots.

Thing is, you're helping your team more by killing the Heavy by shooting him in the face rather than taking his health down to half and covering him in pee.
SS is a relatively useless rifle right now. If you have less-than-great aim, you shouldn't be playing Sniper. It's not a superiority thing, it's just true. If you aren't good at getting headshots, play a different class where you'll be more useful.

This kind of mentality really bugs me, because if unskilled people aren't allowed to play as a Sniper, then how are they supposed to improve ?

Let me put it a different way. I'm very good at twitch aiming. I play Scout a lot as a result, and I do rather well with it. If I try to play Sniper, I'm absolutely terrible. The Sydney Sleeper seems to be made for twitch aimers to be able to play sniper, which completely defeats the purpose of the Sniper's precision. Some people are just naturally more inclined to play certain classes. If you aren't good at precision aiming, just go with a different class.

I actually found that my sniping improved as my twitch aim improves on the scout. You should try mge'ing with a friend thats about the same sniping skill level as you, i find that helps heaps aswell.
I dislike soldiers that taunt after getting a crocket kill :\
