Since TF2's damage system is different from most other games', it's actually not OP.
How about a forcefield deployer that replaces teleporters? (sentry cant shoot through it nor can you and the other team.)

The sentry should be replaced with an inanimate pile of junk. At level 2 it is a larger pile of junk, slightly resembling a mech. At level 3 it is a fully operational mech, with a level one sentry turret on one hand and a level 3 sentry rocket launcher on the other, only pilotable by the owner or an enemy engineer. It can't jump, it takes a few seconds to get into, which leaves you vulnerable, and the pilot is still susceptible to headshots. Also spies can sap it. A sort of revolver that resembles the HL2 revolver with a short barrel, that integrates a cocking system left click fires, takes a full second to fire if not cocked. right click cocks.

I think they should make the engi get out of his usual tunnel/enclosed area routine, like give a longer range sentry that does less overall damage or a teleporter replacement that works best in the open(like a jump pad), A revolver like the spies which does more damage at the cost of rate of fire would be a decent weapon for this. Ammo is a non-issue for the engi, he carries 200 pistol ammo, maybe 48 revolver and is only slightly stronger than the spies overall(compare scout pistol to the engi for example).
A rivet gun, does about as much as a revolver but arcs and fires a bit slower. It uses 10 metal per shot instead of having it's own ammo supply. Can kill a sapper in 4 hits (so you're running to your buildings which are being sapped, you fire a couple of shots into your buildings so they only need 1 hit from the wrench to be removed). Perhaps it can repair buildings to.
Engineer should be able to create decoy sentry, dispenser and teleporter that explode when destroyed.

Long range sentry sounds pretty cool, except have it fire slower, cause more damage per hit, and reduce it's turning speed. That way it'd be useful at long range, but absolutely crap up close. It'd encourage the Engineer to get out of the tight spots and absolutely dominate wide areas of the map, but because of it's crap turning speed anything fast can get around it and kill it.

He should get a defense minigun, which takes out rockets from sentries, soldiers, arrows and grenades, but doesn't do much damage to players.

Would cause other engies to build short range ones to put near it.

How about an EMP grenade? As in, a one time use grenade that is thrown at the enemy like the Jarate and cannot be resupplied except at the spawn? Meaning dispenser camping does nothing. So it basically stops the uber straight away. It doesn't bounce or anything, it's just like the Jarate, exploding on impact. Also reveals spies and drains their cloak, slowing cloak regeneration to half. Or would that be OP? Maybe cut out the spy revealing powers, or just centre it on spy revealing.
My idea for a pistol unlock would be an extra toolbox, that lets him carry around 100 extra metal. I'd use it.
