Goddammit, I can't seem to make a straight line with the Animation Set Editor for adjusting the FOV and focal distance.

It keeps resetting for me.[/QUOTE] Create a new camera the way you'd make a moving camera (set new camera, record the camera footage, bring that into the animation set editor) and fool around with the slider bars on the timeline. Turn on the Focal Plane by right clicking on the view port to see what you're focusing on. Use r_sfmfulcrumdof 1. And you should be good from there.
All these videos you guys are posting still look like Source Recorder videos. Is there something that Valve does to make them look better (besides the custom animations) that we don't know about?

I think if done right, we can get our movies to look similar to Meet the Heavy, Demo, Engie, Soldier. Look how different Meet the Spy looks than all the others. It's pretty clear they've got some high end shaders and lighting bits.

Guys, just an FYI, you can use the Animation Set Editor for just about [I]everything[/I]. You can add faceposing (not lipsyncing, but similar to what you can do in GMod with sliders) by right clicking on the timeline, Create Animation Set, find the model you want to animate, and then hit the red circle and start your posing!
