Engineer, like the Spy, is a class that gets harder as other people get better. And believe it or not, there is a difference between a bad Engy and a good Engy. And there IS a difference between a good Engy and a REALLY good Engy.
You just need teamwork. Having a Pyro that is willing to stick around with you near your Sentry can greatly increase your chances of survival not only by Spies, but by blasting Ubers, Stickes and the like back.
The Engy, Also like the Spy, isn't just a "Shoot them better" class, like say the Soldier or Sniper, it takes planning, tactics, and coordination. you got to know how to set up, when to move, when to retreat, and how to effectively communicate with your team to win.

Sentries range needs to be boosted, there's always 5 or 6 pockets that a demo can throw stickies, and several where a solider can stand and rape your sentry with pin point rockets over and over again.

The problem is that one lone Engineer is a goner, but 3 Engineers is an unstoppable wall of halted progress.
There's no real happy medium.
You know what my best class is? Engineer. 37 points 1 life. 12:25 life, 15 kills, most dominations 4. Perhaps engi is the defensive equivalent of the spy.
I disagree respectfully, if engineer was buffed, having 5 engineers could work.

Dont forgot that a decent soldier can outrange a sentry, do splash damage or even sidestep out of a corner and kill a sentry.

If you repair the sentry, and you are far away enough not to take damage from the rockets, they can't do shit. Unless, of course, it's a level 1 sentry, in which case it doesn't matter. Detonate your sentry.
If you have a level 3 sentry with a Level 3 dispenser with full metal in it's reserves, you can keep tanking the Sentry and an ubered Soldier can not out damage you, unless an outside force plays in. (Soldier gets a crit rocket, Spy stabs you, third class assists in dealing damage behind the ubered pair, etc.)
Hopefully in the engineer update they'll give him some nice, balanced defense measures against Demomen and Spies.

The engineer probably wasn't actually designed to let you build sentry nests that last whole rounds. Valve make that kind of stuff quite clear.
Don't forget about the pistol. It's surprising how much damage it can do and it comes with 200 ammo. I've taken down heavies with a crit pistol in less then five seconds.
My Engie nests ALWAYS end with 2 stickies. Or if I make a lvl1 sentry, a Pyro can destroy it, without corner-flames, and still have 169hp.
Most of the time a single demoman isn't a problem. Whip out your pistol and shoot down his stickies.
Engies can't really play alone. You need another engie to to effectivly set up and maintain base defences because a heavy medic pair can take out a sentry nest with ease but have trouble taking down two.
Plus engies and defensive pyros work as well together as heavies and medics do. the engies provides them with limitless health and ammo and the pryo provides the best anti syp (and if they have the regular flamer andti uber) defence possible.
Same applies if they are both on the offence.
