Jarate is [I]really[/I] good, whenever I've played MvM sniper I've run Sydney Sleeper, Bushwacka and Jarate. This is actually a really good set for taking down bots as well as dealing damage, since you're essentially amplifying the damage of your heavy-damage classes.
Spy is essentially useless in this mode, I think he's the worst class. The bots are just too aware to even have a hope of fooling them.

I have to say, I think Valve did a great job on the hats this go around. Almost all of them are really subtle, fitting the character and yet being suitably robotic without being all eye-poppy. The Heavy is the exception to this, but even then it looks pretty nice.
My favorite one might have to be the Sniper's, truthfully. The metal flaps are an excellent touch.

Snipers are one of the most useful classes once they get their upgrades. They murder groups and big enemies. One charged shot from a Machina with the exploding headshots can clear an entire group or third the health of an Octoheavy and kill all his Medics.
It's all about HOW the classes are used, honestly. There is no "most useless" class.
