Some of these hats have only one Unusual version (i.e. Knifestorm Fedora, Lantern Fedora, Harvest Moon Mining Light...), so those are going to become even more expensive because they'll be forever one of a kind.

People will assume they're more valuable because you can't get the hat in normal or unusual rarity anymore, start charging more for them, then people will start paying more for them despite how illogical it is.

It all makes sense now.
Those hats were merely worth 1.22 refined, so nobody bought them from the store.
Valve wasn't making any profit from these hats because everyone were crafting them or trading for them.
Now the only way to get them will be with trading or with the market.
Prices will go up because they're rarer. Higher prices mean more dosh from market sales.
Money.
