The thought have already crossed my mind, but there is simply no "gold" color that matches the chapeau. All the colors we call gold are just yellow or orange, we have no real gold color. It would match the clothes even worse than now, because at least now it matches with the shirt.

Not the biggest fan of a black Fast Learner, and the white belt on the Stash looks kinda weird too IMO, but holy hell I love that spy loadout.

Frankly, a lot of these feel a bit.. Pointlessly flaunt-y. They look like you're just randomly combining a bunch of expensive stuff. Still, the Medic is nice (though I hold a grudge against the Specs), the Demo and Heavy have well-executed themes I guess, and the absence of overly garish items is admirable.

War Pig doesn't work with the Menpo, Noble Amassment doesn't fit with the cape, Blueprints don't work on the robot Engy, Medi-Mask is ugly as all hell with your otherwise gentlemanly Medic, Koala doesn't go with your plastic red Sniper, and the Noh Mercy has no place on the also gentlemanly Spy.

I like the Team Captain's default coloration (and support it being unpaintable forever) because it matches key parts of the three classes it's used on. It's auburn/navy on Medic (like his trousers), earthy brown on Heavy (to match his pants), and bright red or blue on Soldier (to match the most prominent part of his uniform, his coat)
Despite the fact that I think the TC looks like absolute shit on anyone but Medic, I think it should remain unpaintable because it doesn't NEED to be painted to perfectly color-coordinate to the classes it's used with. Why would you want to paint that? People would just do what they usually do and render it seven kinds of ugly with Putrid Taste of Lime and Pink as Fuck.

i use value of teamwork on my essential accessories, the blue from team spirit looks too light to me.

rest of my classes don't really have any class-specific hats that I like too much, so I just use the human cannonball

Because it isn't expensive paint, it's along the peasant paints.
Also I personally like Waterlogged a lot and put it on any hat I can get my hands on.

When did I say you're not? Flaunty and garish are not the same thing; Your Balaclavas-painted Bill's and (for example) a Pink As Hell All-father both look like blatant displays of wealth, but whereas the Bill's looks good the All-father would be a giant eyesore.
I personally find most of them a bit random-looking, dislike a bunch of the items/paints, and consider the 'Black Tossle and black FL' and 'Pimp Demoman' loadouts really overused. Still, if you like how your loadouts look you should of course keep wearing them. And I occasionally run around and do a terrible job of playing Spy just to show off my oh-so-precious sparkly hat that I didn't even make. I can't say I have the moral high ground when it comes to flaunting.
