i think the atomic accolade is the best badge overall it's colourful and good looking

Well that's all fine and dandy. What you don't understand is that it's green for a reference to shrek. maybe you have or haven't seen that movie. And not just painted green because it's fucking green. Please, I highly doubt Constructor even uses this loadout and wanted to show us a funny name & description he came up with

Oh hey, that's the exact same hat/misc combo I have. I even have my TDE painted white.
I never understood why Valve added all these boxes to the classes. I think that it would look a lot better without them.

They're side satchels, big pockets basically, for carrying equipment and belongings in (I think, I have no personal experience with them).

The differences these appear to have some practical purpose.
Ammo satchels are a real thing. They can carry between three and five mags and are an extremely common real-life military item. Just look how many these guys have:

Since the mercs of TF2 are technically paramilitary troops, it makes perfect sense. On classes with shotguns or pistols, you even see them reach to the satchel for more ammo when reloading.
You could also argue that the fact Scout seems to keep his pistol ammo in his pocket is why he has only 48 rounds while Engineer has a satchel and 212 rounds.
Soldier also reaches into his little back pouch to grab rockets, although that ones one of the more apparent uses of them.
