Well, depending which misc you pick for the Engie, you get a different theme. Gazer for Cyborg Cowboy or Blueprints for Cowboy with a Plan.
For Spy, the Triad Trinket might fit but it might make him look like a pimp (for me atleast). Try the loadout I have for one of my Spies (Cosa Nostra Cap, Business Casual, Made Man).
I'd like to talk about about actual weapon loud outs (As silly as it is to talk about anything other than hats)
My two main pyro loud outs are my "Offensive" and "Defensive" stuff. Offensive is Degreaser/Shotgun/Axtinguisher, while my Defensive loud out has Stock/Scorch Shot/Homewrecker.
The offensive one is obvious, it's really nice to be able to switch between shotgun and your sting. With my defensive stuff I like to hang around my engie bros, and when I'm not destroying sappers I go to all the choke points and spam scorch shot incase a spy comes through, or I just light up a random enemy. When I do that, there's a good chance they'll retreat to get a health pack because it's bad to charge while on fire.

I only have one loadout for each class
If I feel I'm not doing very good with that loadout/the other team has figured out how to counter me, I switch classes
