How is a plant with a giant mouth any more fitting or generally better than a teddy bear? Aesthetically yes, it looks neat, but it makes no sense at all.
And no I'm not saying the teddy does, before any of you even try pulling that again.
What do you have against the bear? How can you hate something so cute?
Because even though cute, it's not something that fits Engineer's character at all.
Stuffed animals generally do not look at home on neither construction workers, cowboys, nor mercenaries. It does not at all make any sense as something someone would bring to a war, or carry with you anywhere outside of your home, especially for a grown man. It also has no ties to any family members or anything, it's never implied that he's not the real owner of it, so there's no reason to believe he has a daughter at home or something like that, he's a grown man who for some reason carries a teddy bear that looks like him around on a battlefield.

If anything, it implies an attempt to hold onto some of his sanity while he's in a bloodstained battlefield. He's one of the most mild-mannered mercenaries out of the bunch. Sure, he may be desensitized to the violence judging by how nonchalantly he will allow his buildings to slaughter people, but that doesn't mean he doesn't intend to have a somewhat-normal livelihood outside of the fighting -- take a look at the comics where he has appeared in, he's rather calm and serious and only threatened someone who was getting uncomfortably close -- he's even going as far as sitting down to read a story to a friend. If these things don't seem remotely sane to you, then what is?
It could be a childhood memento that he wants to keep around as a reminder of happier times, or perhaps it belongs to someone he cares for who wanted him to keep it with him as a reminder of who that person is. None of that is explained, but the preceding paragraph is enough justification without needing further explanation.
Any reason he's using it is always speculation. This is what makes it unfitting for him, we have to try and come up with our own reasons why we think he'd actually bring it with him. Any reason it fits him then is therefor not a fact, but mere opinion, or a guess to why he'd bring it along. It fits no real stereotypes related to Engineer what so ever.
