Something that enhances sticky/rocket jumping would be pretty sweet.
I wonder if they'll tell us what weapon the opposite class would've gotten if they won.
From what I understand, there were 7 weapons made. It doesn't make sense that they'd waste time modelling a weapon that never sees the light of day, and instead they make one weapon that goes to the winner.
probably going to release them one at a time
My guess after looking at the silhouettes behind the classes is it's a mortar. It would be mid-ranged, indirect fire and would suit both classes, gameplay and personality wise. It would also be useful to hit targets behind cover but you would have to switch weapons indoors. If it was powerful but had low ammo and wasn't too spammable I can see this work. However if both classes had a mortar it would become dull so I doubt Valve would ever give it to the loser class.
4th/7th secret weapon should be pair of goggles, a targetting system for the soldier/demoman. It draws a circle at the predicted path of an enemy and helps the soldier/demoman get his shots in.
For game balance purposes (if this is in fact the weapon), it should have -75 to -100 health on the user.

90% Less Ammo, 0% Crit.
Basically, you get one targeted shot, then you have to reload.
I'm nit sure who suggested it- either here or the Steam forums, but someone suggested a trophy for the winning class as a melee weapon.
-50% damage
-Crits against the losing class
I also wouldn't mind seeing an unlock that is just ridiculous and is mostly just for bragging rights.

the losing class would be pissed
A bloodied and broken version of the other class'es melee weapon.
-10% damage.
Your class gains a permanent smug look.

I've also heard the counter argument to this idea...
"If the Demoman gets it, we get a weapon that crits on Soldiers.
If the Soldier gets it, we get a weapon that crits on black people".
Soldier:
A throw able maggot.
It sticks onto peoples faces and drains their health slowly, but also covers their screen.
Removes the Shotgun and Shovel.

The weapon must be something that would fit demo as well :/
Demo: second sight
can see cloaked spies when active, removes bottle
10% more damage taken when used, next to no movement when out
EDIT: cannot see DR Spies
A joke weapon. Slingshot, rubber band or something that's useless. I mean, honestly, what else could be used by either class without balance issues?
If it is meant where both could use it if either wins, it will probably a bouncing, timed detonation rocket.
But there's been reports how "the demo weapon is much cooler"
Source?
FFS, it's probably just a second rocket launcher/nade launcher, just like how the spy has 2 unlockable cloaks.

I also remember in a thread loooong time ago like 3 months + in this section about leaked beta weapons and new categories and one of those categories was a Grenade slot...
Also in TFC the Soldier was able to use grenades. Maybe Valve is taking the grenades from TFC and implementing them into TF2 as one of the new weapons/the "secret" weapon unlock for soldier?
It's going to be a melee weapon/replacement.
Landmines? Proximity Style?
A modified version of the losing class's melee weapon(Soldier gets a modified bottle, Demo gets a modified Shovel)?
Hell, I don't know.
The Soldier gets his weapon and proudly shows it off, the Demoman gets jealous and, in a drunken rage, breaks it in half and steals the half he broke. Both classes get a half of the weapon as a hat.
Nothing.
All the bloodshed, betrayal and heartache for nothing... WHHHHHHHY!!!!
Or a pretty badass weapon, I don't know.
