I think over 100 crates, 2 Unusuals.

Got a green confetti Glengarry Bonnet from my third crate.

Opened like 20 more crates and got nothing.

Managed to get a few more unusuals though but traded them away for $, now I have two.

They don't, within the first week though someone used a glitch to show sunbeams on a hatless engi which caused a craze of people wanting hatless unusuals for a bit.

There's only one way to win using crates.
Don't use them. It's essentially the TF2 equivalent of the lottery, but worse. Unusuals are only going to get less and less valuable.

Can anyone explain how Unusuals actually work?

I thought it picked a random hat from the crate you are opening, then gave it a random effect.

Does it pick a random hat from all hats?

I think the hats in that crate have a higher chance of being unusual than the rest, unsure.

My first crate ever had an unusual pugilist protector with a peace sign. Traded it for 8 of my favorite hats.

5th crate, it was an Unusual Guadamsdflksdfk with Searing Flames, traded it for an Unusual Football Helmet + 3 vintage hats, 2 regular and 3 sweeteners. Then I gave my Unusual Football Helmet away to a friend for free and out of the 5 other hats I currently only have one of them left... Plus the other regular hats that I all use :h:
