SFM would be a good try. But obviously people wouldn't be able to play with you, unless they downloaded it too.
In my opinion the game was at it's best inbetween the Scout and Heavy updates.

There's a "last disguise" key, look for it in the options. Pressing it while being disguised switches your disguise's weapon to correspond to the one you're holding.

Even if you guys don't want to play TF2 this way, it would be a very nice addition for everyone else who did.

I'm not implying that TF2 would be as popular as it is today without the updates, I'm saying that the TF2 we have today and the TF2 we had back in 2007 is two different games.
The game back in 2007 was simple.
Every character had a unique personality based on a stereotype, every character had a unique playstyle, and nobody obsessed over items.
The game we have today have at least 3 alternative weapons for every class, a lot of items that don't fit the original role of the character, and a lot of cosmetic items that don't fit the visuals of the characters. A lot of people obsess over cosmetic items, a lot of weapons made the old ones less appealing, and a lot of the kill-taunts are lame looking and too unrealistic.
I would want this change as a server-side option, so I could go play TF2 the way it was originally designed.
Don't tell me to go play the console version, it has an extremely limited amount of maps and it's full of glitches/exploits.
I want to play the 2007 version of TF2, but with all the fixes to gameplay we've had since.

They should have Team Fortress 2: Classic as a game.

You are stupid for not realizing that the console version is full of gamebreaking exploits and bugs.
A Pc version would be superior as these things would not have to exist.

A lot of my friends who play TLC doesn't think so.
Some of my friends who owned TF2 have also stopped playing it entirely because it's too confusing or "wacky".
actually i've seen some "vanilla" server one time, but i think it was after first pack of hats was added to game. Not sure about air-burst, but there were no hats neither new weapons.
vanilla implies it is the game without addons, not the game without official updates.
This would be pretty easy to implement but it would be a pain to reverse it, so it would be more of a permanent server modification...
Using
items_game.txt
- Disable unlockable weapons
- Disable Air Blast
- Disable hats, medals, etc.
objects.txt
- Disable upgrades
player's respective response rules
- Disable new taunts
Also I would play a server like this, I liked the game back then, dunno if I liked it more or not seeing as how I like it now and I liked it way back when it came out.

Thats the point of the joke.
I think TF2 now is too confusing and annoying compared to the TF2 back in 2007 I really enjoyed to play.
And I don't want every bug back that was there in 2007, no, simply: No hats, no extra weapons, no kill taunts.
And yes, the compression blast is cool, and the upgradable dispensers and teleporters extremely handy. I guess we could leave that the way it is.
But still, even without those, it was a lot more fun to play than it is now.
And I love Payload, but does anyone even remember tc_hydro?
tc_hydro is one of my fav maps but sadly no one plays the map at all.
It's not the greatest map out there but it's still a really enjoyable map. I haven't really played it since 2007 or 2008.
It's more than likely possible, just time consuming to do them all. Soniuc seems to have the right idea.
