"Apricot" in the TFC's Sniper's voice triggers the door to open to his sniper nest, to cover his back. It doesn't work with anyone else's voice (so the Spy can't escape) and is pretty impenetrable (so the TF2 Sniper had to shimmy out the window).
As for why he uses "apricot" as the code word...

you guys dont know what a retcon is?
all the information that we assumed from older pieces of lore are rendered moot by any contradictory newer pieces of lore. this is just how it works.
for example, in street fighter 3 third strike it is stated that Chun Li killed bison and ended shadaloo before the events of 3, but in street fighter 5 (taking place prior to street fighter 3) it's Ryu who kills bison and destroys their base in the process
the same goes for any "clone canon" or there being more than nine mercs. I think we're meant to assume that the other 9 mercs are just some randos with a similar skillset

Someone on Tumblr pointed out that merc work is filled with a lot of morally questionable activity, and yet everybody but the Medic has gone to heaven.
They theorized that the Medic stealing their souls cleansed them of their sin and weighed that sin on Medic instead since he now owned their souls. Intentionally or not, Medic possibly guaranteed the other mercs place in heaven. It's definitely something to think about.
