I might jump back into TF2 on my Jailbroken PS3 just for fun. Since it's Jailbroken, I can get it to load up models and props etc and even some Jellyhopping on the side.

On the PS3, you can still edit the config.cfg file and bind sv_cheats to keys. You're correct about the updates though - that was EA's job and they couldn't be arsed.
On the Jailbreak however - you can edit memory as it plays so you can force multiple commands as it runs instead of having to bind options to keys although this is for DEX systems (if you're on a Jailbreak - very little reason NOT to convert to DEX. It's just so much better than retail).
