I couldn't live without stuff like the equaliser, degreaser, back scratcher, sandvich, jarate, DR...
Some of the new unlocks are nicely balanced and hella useful, but I'll agree many vanilla weapons (Scattergun all the way) are better.
I'd like a vanilla function, but I wouldn't personally use it much because I seriously can't stand certain things about it:
- With Pyro, I always use the default flamethrower, but I NEVER use the shotgun or the common fire axe: the Flaregun and the Homewrecker are far too good to not use them
- I don't like using the Bottle with Demoman: I use either the Caber or the Frying Pan
- I don't like to use Engineer's default Wrench: I really like all the other melee unlocks, everything but the default wrench
- I don't like using Medic's default Bonesaw: I mainly use the Übersaw with him
- The absence of the current balance tweaks and modern mechanics would be annoying. I don't want to have a impossible-to-play spy/engineer class, I don't want overpowered soldier/demo, I want to have airblast, moving buildings, cloak rechargeable with ammo packs, extra speech lines, the new gamemodes like King of the Hill, the new maps, etc...
On the other hand:
- I always use Scout's default Scattergun and Pistol
- I always use Soldier's default Shotgun and Shovel
- I never play Demoknigt, I only use common explosive weapons
- I always play Heavy with the Vanilla equipment
- I always use Spy's default Revolver and Knife
- I won't mind at all the absence of cosmetics, more frames per second for everyone
- Having noise makers (and probably duels) out of the game will be a great thing
So... yeah, mixed feelings about this

My idea of "Chocolate TF2" is:
- Dustbowl
- Only Demomen
- Only Bottle
- Can't attack, only taunt
- Final destination
I prefer chocolate, how else would I have a Dragon mask for the Pyro?
Just have a console command, like tf_vanilla 1 or something.

Forced melee was going on when I was there.
And some guy complained about how the admin always forces him to melee.
So I am lead to believe, an admin forces all to melee.

It's a bit complicated.
I enjoy playing with bots quite a bit; they're not perfect, but if your favourite servers are empty and you just want to have some fun without searching through servers with horrible add-ons or communities - and the teams are balanced, too.
That's why I'm used quite a bit to vanilla gameplay and that's maybe why I get bored of it more quickly. Many weapons change playstyles for classes quite a bit and that makes the experience fresh, especially since you don't just pick from sets, but can combine different items and discover nice combos.
There are of course certain things I don't miss when playing Vanilla and I think we all can think of a list here. It's like with hats and miscs, some stuff looks nice, [u][url="http://dl.dropbox.com/u/22370734/cp_dustbowl0047.jpg"]some[/url][/u] is convincing you to fund Brain Bleach research. I definitely do not think TF2 would have died without unlocks, its gameplay was strong enough to become a classic IMO.
Overall I don't really have an inherent problem with unlocks, they can be really fun. I'd just like better QA from Valve. Which is pretty much the only big complaint I have about TF2. How humble of me.

Why is it that vanilla mode seems so popular, yet I can't find a single decent server running it? I swear there was a plugin(s) that allowed it to be run...

There's a Facepunch Vanilla server if memory serves me right.
Also has way less annoying micspam than the unsrs server that constantly makes you open the menu for muting people.
Azelphur has a vanilla server, it's always empty though, no mic spamming of music allowed, all unlocks disabled including hats. I would link it but I think that's against the rules, unless a mod says otherwise.

Yeah yeah I could swear I've joined a "Vanilla" server before but still I had access to all of my items. Some Lokalen Vanilla server or something. Maybe it's just the vanilla respawn times or so.

Eh, the owner is in Europe, but the server is hosted around New York. IP is Vanilla.Azelphur.com if anyone wants to go into an empty server.
