red is most portrayed in valve promotionals and videos (pretty much 100% save for war! and meet the spy which featured more blue oriented roles) which makes most peoples first thought of tf2 being the red team lined up in their signature poses
and spy is the most often portrayed blue because obviously disguise
red is also the default skin for players which leads to even more reason they're portrayed red in SFM and such. if they were defaulted to blue, i imagine valve would have made their videos based on blue, and by association most fanart would then be blue aswell.
