That's only corporate theft. I personally haven't done too much of that, only twice that I can remember. The problem with corporate theft is that if you don't take all of their funds, or at least the vast majority, and essentially destabilize and destroy the corporation, they'll recuperate and then come after you (as best they can anyway. If you're smart and don't go spouting off all the details you'll be fine) The added issue of a corp's CEO keeping a good portion of the funds to himself can also complicate this.
Most of the scams I do are low-profit, short-term scams. For instance, I pose as the CEO of a mining corporation looking for inclusion in an alliance or simply finding access to 0.0 space to get some nifty materials. You find a target either through advertising or friends and make an offer. Let's say they will let you into 0.0 to mine if they get 50% profits. You agree, give them the low-down on your (fake) fleet of mining ships, including something like an Orca, or something that other scammers will be looking for.
That's the bait. Now, if they're just stupid they'll fall for the switch. The best part about the Fake Orca, though, is that it will draw out other scammers. This is something I've learned and adapted to, and it's worked a few times so far. If a less-than-honest 0.0 corp is looking to lure a bunch of miners into outlaw space to ransom their Orca and their bigass mining fleet, they'll be more inclined to play along with your bullshit so long as they think you're just a dumb little newbie trying to get into 0.0. The switch is where you claim you've recently been conned by some unscrupulous, unnamed corporation and had your shit ransomed and stolen, so you want an up-front deposit of, we'll say 20-50 million. It doesn't matter whether they want to have you mine or have you at gunpoint, they stand to make quite a deal more than 20-50.
So you just take the deposit and run with it. It's not very much, but it's enough. It's got about a 10% success rate, which is more than I can say for "SEND ME ISK AND I WILL RETURN IT 10 FOLD."

Uh you know cans blow up after a certain period (I forget..2 hours maybe) right? Having 10 out at once is REALLY not smart. Fill one if you have to but generally jet-can mining is for when you have a proper hauler. Also retrievers are unlikely to steal your ore.

What do you mean by that? You mean NPC corps? Of course..I'm in a nulsec corp but I spend most of my time in empire; it's not BIG bucks but I do alright.

Missions are the fastest way to make early money in Eve. Since you're new, you will be doing Level 1 missions close to your home turf. A level 1 mission can net you anywhere from 10k Isk-200k isk +w/e you salvage along the way. Mining early on isn't worth the time until you have a Barge thats fitted with Lvl 2 Mining Drones and Strip Miners. That's what I do and I can make about 5million isk an hour on lowby stuff and if I can find some mercs who wants some side money, I can make about 50 million an hour on higher grade ores.
Guide to newbie money:
step 1:
Train skills so you can use salvager 1
step 2:
Get 2 or more salvagers (1 will take too long time)
step 3:
Ask if you can salvage someones lvl 4 mission
step 4:
Profit $$$

I figured that mining is currently the most profitable thing for me. Around 200k every 45 mins and doing some agent missions inbetween.
I guess that's ok for a beginner.

I do one Epic Arc mission, some take 5 minutes some 30, but I get 200k+ for them.

It's in the 80-90 mil range which isn't bad for the buffer tank/DPS you get out of it.
