You need to remove a large amount of equipment to make it work.
Basically, just remove all of the seeds besides the plump helmets (maybe some pig tail for the fiber) and all the buckets/medical supplies (as those can be made on-site in 3 RL minutes.) Also remove the extra axe, since you won't be needing it. After this, use the excess points on up to 60 or so plump helmet spawn, then the rest of the points on food and drink.
When choosing animals, take 1 cat of each gender, and 1 dog of each gender.

I've found from quick construction of a danger room, immediate smelter/wood furnace construction, and a small migrant wave, you could easily get an accomplished swordsdwarf in a full suit of steel armor by the beginning of next year's spring.
what kind of doctor? Bone?
And what stuff should I take with me.

This is my usual set up, and the type of doctor should be an even spread between diagnostician and wound dresser (as those will be the most common injuries you'd likely sustain in the beginning.)
To make both of them equal, you'll have to lower your mason skill to Skilled/competent (whichever is one below the max), rather then proficient.
As I'm playing with modified stats, if this isn't possible then just remove building designer for the miner and, if that's not enough, some of the "random meat" that is brought with you.
Damn, I'd really love to get into this, it's just that the amount of text and setup at the beginning of Fortress Mode kind of overwhelms me...

I'd drop the anvil and take more booze; you can always buy anvils from traders.

The anvil is vital to making some steel armor you'll sell to the first available caravan.
While your miners are busy carving out the initial fortress, just have your brewer make one order of steel, then just have him (since he's an armorsmith) make greaves/weapon (greaves to sell, weapon to give to the "in case of emergency" soldier.)

It's something to get used to, but from my experiences, you may want to try out adventure mode at first instead of Fortress. It's a lot simpler, and is pretty much just throwing corpses at people and ripping off their legs. It's a good mode to get used to the graphics and other things. Just make sure to have the wiki articles up in another tab and never to travel at night without companions.

Also, another pro-tip is to invest in throwing. I've really found this skill to be quite the helpful little thing, as you can just take some sand or random weapons you find and chuck them at people.

Why would you waste resources selling steel when you can just as easily make a shit ton of rock crafts and sell those?
I usually start out with default stuff and a few wardogs.

1 finely crafted steel greave is enough to get me all the booze and food I'll ever need, possibly plenty of ore as well.
My fortresses traditionally deal with selling steel weaponry, while occasionally giving out Adamantine items as gifts.

It's practically impossible to have a cave-in in the newer version IIRC.
You could hold an entire Z-level on one block if I remember correctly.

That doesn't happen anymore. As long as any sized piece of earth/construction is being held up by 1 block, doesn't matter if the block is in the corner of a 25x25x25 cube of solid gold, it will hold up.
I never see a reason to start with an appraiser as one of the 7 first dwarfs. They get all kinds of social skills when they're idle and just strolling.
