I don't follow mods that much, is there a way to fix the colour of the sides of the grass? I'm using that Quandary pack, but only a couple of the months look decent because the the sides and the top don't match properly. Or is this just a byproduct of using the in-game texture pack chooser?

The grass sides are a specific texture in the terrain.png and cannot currently be controlled by biomes, and thus they don't match properly.

I think people just kind of disable some feature, making it look like before the update.

I just had an idea for a mob
Imagine this:
You are exploring new terrain, doing your job, digging, placing some torches. Suddenly you spot a red creature behind those trees over there. Without any doubts you leave your place and almost automaticaly start chasing it. It's going to be worth it.
You know you have to be fast, if you lose the creature from your eyesight it will run away. After 3 minutes long chase, the creature wents into small hole in rock wall.
You've made it!
You are equiping your pickaxe, starting to dig. After a while of enlarging creatures tunnel you discover a little cave with a chest on the middle. The creature is gone, however it "left you a reward" - a treasure chest full of diamonds it collected through its entire life.
Any good names for this mob? Basically it's leprechaun type of creature, encouraging player to explore world around him, adding this "thrill" to daily routines. Who knows, maybe next time you will be checking for any pigs in your trap, you will notice a little red creature behind those trees over there? ;)
It would be better if you picked your difficulty when you create the world so you can't change it ingame as to be cheap and switch to peaceful if you're close to death.
