Have you ever noticed that headcrabs have holes in their stomach which they use to couple with heads? Well the zombies they create have a hole in their stomach too, so my suggestion is a human zombie which has coupled with a bears head. So a headcrab-zombie-bear-zombie-zombie:v:

Well, in Half-Life, you can see zombies "eating" dead scientists by shoving the meat into they're little maw, so I guess it's a way to allow the zombies to eat even with the headcrabs covering their heads.
