How? It throws me into some totally random bullshit, it doesn't let me choose things like floating or inland etc.

It isn't an option, it just randomly generates like that

It's completely random if you get floating stuff or not. Be patient.

Ran around on infdev for 30 minutes at least and didn't find ANYTHING interesting, just rolling hills with random lakes and cliffs...boring. I want a floating island but i cant find any D: Not even an overhang, just flat land

Bad luck then, I usually see about 2 floating islands from my starting position.

You could also just keep generating new worlds until you get a starting position you like.
