If you're stalling in turns, you're turning too sharply. That's all there is to it. Different planes can handle different turning speeds, but ultimately you shouldn't ever stall through a turn, it's pure pilot error. Exception: if one of your wings has been shot to all fuck, it causes major drag issues so it's understandable that you'd stall through a turn in that situation (but good trim + rudder can make it ok).
The early to mid war Spitfires are all great turners, later marks got increasingly heavy (and powerful) and so were somewhat more sluggish. Personally I'd suggest the Spitfire Mk Vc. The 109 is not a good turner, its strength is what gets called "boom and zoom", which is where you close on your enemy with great speed, fire a short burst to hopefully disable or destroy them, and overshoot and pull up, gaining height rapidly in order to rinse and repeat if they aren't going down already. Early- and mid-war Spits and Hurricanes don't have the engine power to follow the 109 in that situation and should use their turning advantages to pull the 109 out of his comfort zone - using the split s is a good technique for this.
When you say "108s" I assume this means you're carrying wing pods - don't. The nose-mounted 108 is more than enough, and adding wing pods just adds weight and drag. If you can't do it with a 20mm high explosive round, three of them isn't going to help you. If you're running out of ammo, you're firing too much. Don't hold the trigger, don't even burst fire, try to get off single shots. Any aircraft with any cannon will take out a fighter with a single good hit.

Set your width and height to you're native resolution and set SaveAspect to 0. I have my game in openGL mode if that makes a difference. Not sure why your game wouldn't boot.

As long as i can find the normal server list and the servers hosted by facepunch xfire works good enough for me.

There's not many coop at all. But it does show about 170 servers.
