I really like that moment in just about any game where you get a headshot with a WAY too big gun.
I love it when a game has a magnum that really makes you feel the power it has. Especially when theirs a huge kickback and a loud bang. Its the best to when they do something like in black ops, were you see the persons limb blown off.

In TF2 when I hear the jingle that plays when you dominate someone and get a revenge kill.
Whenever I kill a sniper at TF2, especially at long range.
In Fallout 3/NV when I hear the level up sound.
In WOW, whenever I killed someone in PVP, or whenever I got an epic.
Railing Kills. Any time I kill an enemy and they fall over a ledge. Any time an enemy is falling. Ragdoll physics are fun like that.
Ragdoll physics, especially when you hit them with explosives and they go flying in the air.

The character's lines when you dominate someone as well, there's something satisfying about having something letting you know you're kicking ass.
