It's hard to pin down what ones best. ME3, I think, had the best gameplay mechanics, some really good story lines, but was rather short and linear. ME2 has the simplistic gameplay, and the story seemed somewhat pointless, but I think it felt the most "alive" in terms of the universe. ME1 had tons of things that I missed from the other two games, but has that awkward first step feel.
For example this is my favourite moment in the entirety of the Mass Effect series:

Easily, goosebumps all over my body when this happend. The music and sheer power of it all just made it one of the most memorable scenes from the series.

I'd say that ME3 is actually the longest in terms of fully-fledged, detailed and involving content, though ME2 is probably longer if you have all the DLC. Yeah ME1 was long as fuck if you wanted to 100% it but every side mission was in the same building/underground complex.
lol my imported shepard from ME2, looks like a jew. Should of minimized the nose.

You get extra credits if you import, he'd like that.

Why?
Because they thought months of lost-style discussion slapped onto a three act greek-campbellian adventure is somehow satisfying. Also Because Hudson is great planner and orchestrator, he's not and never has been, a good writer. As for Mac Walters, well his quality shows for itself.
Well I just spent the last hour making a silly little video:

The audio went a bit out of sync but oh well
Hmmm, so Operation Raptor has started? Well, time to promote DefenderBro and I.Will Destroyu (Engie and Vanguard respectively) for that fancy pack.

Do you ever wonder how many hours you've probably spent listening to this theme without even knowing it?
I love this song so much. I love that awesome feeling of wonder, surfing the galaxy on my baby <3
I prefer this version.

I'm going to make this one day. If you don't like 8bit graphics don't you worry, it'll have 16-bit high-res isometric graphics in a separate DLC pack.
ME1 galaxy map > ME2 & 3 galaxy map
both in music and controls. No horrible fuel or scanning, instant travel between planets, and dat bass at the start of the song

I agree on the fuel part, but ME1 also made the galaxy feel incredibly small, since you just zoomed straight to the destination, which was always a single system (No exploring clusters).
In ME2 it was the other way around, the limited fuel made it feel like you couldn't possibly hope to explore all the systems available, so I just never bothered to try.

I'm geeking out here, but that's an oddly specific animation.
I mean, this animation has you grab an enemy from behind your cover. Most games have you go to the guy instead.

This was more than offset by the number of uncharted worlds you could actually land on though. In ME3 you can't land on a single one.

What do you mean by this?
There were multiple systems in the clusters in ME1.

Why go somewhere when you can have it come to you instead?
Krogan is better since he punches the enemy's head off.
If only i have a krogan unlocked..

and at the end everybody gets cake

I just threw loads of manly sounding words together, like ROCK, BEEF, SLAM, METAL and BUNK.
Some of them aren't even words as much as they are just vague sounds, like KROF.

I'm pretty persistent, I went to every single world in ME2 so I would do all the sidequests.
[editline]31st March 2012[/editline]
oh and there was more than one system in many clusters

My names suck more, named them after username I've had, including this FP one.
In addition to Scout, Spencer and [my own name] Shepard.
