The only thing I can really say is to map some songs you like to increase the amount of western/whatever music.

I can't stream for my life. Any tips for that? :< (fastest I go is 150 BPM about)

Practice the really fast maps i guess, i never had any problems with streams.

I've been playing a bit of this recently, mostly on Taiko. I tried standard but I didn't really like it.

Harder diffs generally have waaaaaay more variety because they use loads of beat patterns and tricky placement and stuff and are much more fun to play because of that, they can utilize the song's rhythm to their fullest unlike easy diffs which are just boring tap,tap,tap,tap over and over again.
