You can change nearly aspect of how the acceleration is controlled. How hard the gas is pressed how fast after you press it, how much you let off the gas when you stop pressing.
Just go into the options. Granted, you have to change it in options not while playing, but still you can. Also, I love GRID.

Drifting means friction, means bad. A good approach is to slow down coming into the turn and then opening full throttle in the direction you need to go. Preserves momentum and wastes no throttle. This approach will easily overtake some douche trying to drift 'cause it looks cool.

which is why i said to slow down and turn on the inside earlier on before that drift comment.
