Hit markers, and the sound it makes when you hit somebody in Call of Duty.
Dynamic shadows. I always love when lighting and shadows react properly.
Effects on the visor in Metroid Prime, like when you look up at the rain or go through steamy areas... Fuck, for a games that's about 10 years old it still looks awesome, aged really well
perhaps not such a little thing, but euphoria is the best thing i've ever seen in a game. I can't begin to express how much it adds to a game. I usually don't play games without good physics. I also can't comprehend how much of a badass niko [b]BEH-LEEC[/b] is.
The cracking of your gasmask in metro 2033 The heavy breathing when you wear your gasmask
The physics, and sounds(including footsteps on different surfaces, scary noises, and everything, basically) of Penumbra games, and Amnesia.
In Morrowind, how your character would put up an arm to protect his eyes when traveling against the wind in an ashstorm
Many things from PR, animations, sound, heck, even the way rounds sound when they pass by. For example, take the heavy 100mm HE-FRAG rounds fired from a BMP-3, you can hear it at the end of this video : [media]http://www.youtube.com/watch?v=ct5fU7nr2cA[/media] In Men of War, also a lot of details that I love. You can do so many things that noone knows. Make IED's out of flamethrower backpacks and fuel cans, set your vehicles to self-detonate or generally just ramming things and flipping them over.

I didn't notice it for awhile, but in Halo: Reach, when you fire certain guns, you can see the bolt fly back. Covenant weapons have their own little fun bit. And the dynamic views of the environment on the Spartan Laser, Sniper Rifle, Beam Rifle and Fuel Rod Cannon.
HL2: The way getting shot at through water lets you see little bubbles of steam float up
The working Pool/billiards tables in Duke 3D.
Crashing into a wall and then your car is completly damaged. Fuck yeah.
The ability to turn on the microwave and freak some scientist out in HL1. Also being able to use the vending machine to get driiinks.
Another Just Cause 2 Amazing damage model and explosions
Batman Arkham Asylum How when you go through the game, Batmans armour gets ripped off and cut up.

Games where stuff like arrows etc. gets stuck in corpses. Makes using a bow in oblivion so much more fun. I love to snipe from long range and then take a close look on where I hit.
I love how in crysis. When you shoot an oil barrel. Oil will spill out. And after a while the spill will stop. Which obviously means all the content above the hole has been poured out. And when you shoot a hole a little lower oil starts pouring out again.

It was amazing back then.
The physics in Red Faction: Guerrilla. Although they act wonky sometimes, like when an entire bridge has all of its supports knocked out and 5 bricked are holding it in place.
Valve's face movement system. Car damage system in Burnout Paradise (like when you crash in slow mo into a wall)
Cars in Live for Speed. Crash into a wall at top speed, and your car is flattened completely to the windscreen. But it still works :unsmith:
The working blinkers in the original Driver. It's still so badass!
