A beta means all development process is done, only polishing is left. This is the case for all games. Only remaining development is things that need to be developed to fix things after going into the beta. An alpha is where testing is going on during development. A beta is testing after development.
Remember folks, the press beta was still under the NDA. That is why this version of the game doesn't have the new energy replacement and the Sylvari/Asuran starting zones. We haven't seen that yet, and ArenaNet hasn't showcased it. That is why they are unplayable. It's because of the NDA, not because they aren't complete.

Generally alpha is when a game is playable, it's when all of the things that the developers wanted are added. Beta is where the game starts to get polished and balanced, as well as tested by a wider selection of people to see if they like the game, it's also very possible that during beta they will completely redo/add/remove skills, stats, features, UI, basically anything based on the feedback they get. The following games are all in beta and they've all had many very large changes done over the duration of their beta; Tribes: Ascend, Dota2, and Natural Selection 2 (I'm sure there's others but these three I have witnessed the changes first hand).
That's just ideally though, many companies use the term "beta" as "demo", where the beta is basically completely finished and there is almost nothing the company is willing to change completely.

No obviously I am not aware! But aren't those the same thing as just 'polishing' up the game? Instead of creating new things? Skills are a given because those are always being changed/added.

They don't want to have a free to play model. The initial purchase is the primary amount of funding they get and they want that drive to release expansions in the same way. That's what was successful about GW1. And the stuff in their item shop are supposed to be raw cosmetics and rather benign things, so they shouldn't expect a monthly payroll from that.

Anet knows what' they're doing. Bringing in more players with the F2P after purchase benefit and also having the ability to obtain those cosmetics. They're so nice to us ^^
I can only imagine what they plan on putting in the CE or how much it will be!

Which one because I think it goes through a playlist? Also may be difficult to find the name until a soundtrack is released. I think it's all composed by Jeremy Soule if I'm not mistaken.
