Spell vamp Nunu try it heal like crazy with consume, smite is useful lategame, and E is good too. And you can basically go from 0 HP to Full if you ult right, although you shouldn't be ulting if you're really low

I want to try this game, but I feel like I'd be starting too late in the games life cycle. Everybody would be much better than me

When you first start out you will face other newcomers, it probably won't be too much of a problem unless you bump into a smurf (alt) or something.

It's not hard to beat new players There will always be new players

Because of the ELO ranking system, you should be facing people of roughly the same skill level as you. (As Galaxy said, there are a few people who "smurf"-- create alternative accounts to play people who are new to the game. After level 8-12 it shouldn't be nearly as bad though.)
