Well, this all takes me back to my days as a young lad on Newgrounds. There at least it boiled down to and average score and generally people who liked something wanted it to increase as much as possible so they would rate it five and those who disliked things would react similarly.
Now I don't want to imply that the general steam community is the equivalent of 13 year olds but...

They don't break it, YOU CAN RATE 0/1 out of 5, that's perfectly fine, that's why we HAVE 1/0 or 5; the reason we have 1/2/-4 is so the rest of us can give it a more fine-grain rating, remove our fine-grain rating when it works just as well?

So here's how it works:
Suppose that the current score of something is exactly 3/5 with 10 votes. You think that it should be at 4. This means that you believe that people should be looking at this thing before they look at things rated 3, but after things that are rated 5.
Suppose that you vote 4.
The score will then be (3*10+4)/11 = 3.09
The game isn't rated as 4, but at least it is closer to 4, eh?
Now suppose that you vote 5.
The score will then be (3*10+5)/11 = 3.18
Your vote has twice the effect going towards the same goal.
If you didn't care about how your vote affected the average, why are you voting in the first place?
In a 5 star system, nice guys who vote honestly will be droned out by people willing to game the system.

But in reality, I'd be cool with a system like that: "Cool", "Meh", "Fuck off".

Is't meh or sideways pretty much equivalent to not voting? So we only need thumbs up and down (with the possibility of removing your vote).

Not really, a thing rated three times meh and one time thumb up isn't the same as just one thumb up with the other three people abstaining.
A good five-star rating system is Amazon's, because you see how many people voted for each rating.

I mean the people that exclusively rate 1 star or 5 stars are those that break the system.
Sure you CAN if you TRULY HATE IT or ABSOLUTELY LOVE IT but how often do you see a perfect video or a 100% garbage video (videos being an example)

I really don't see what's wrong with like/dislike/indifferent (not voting). It's much easier to sum up one's opinion as either liking or disliking something (or not caring either way) rather than trying to determine the value assigned to each star (or half star).
Sure, there's less room for refinement, but there's also less gray area. You know that x amount of people liked something and x didn't; rather than knowing that x people gave something 5 stars, x gave 4, etc... The latter tells you a lot less really because, even if people didn't try to game the system, everyone has different standards for rating.
How do you tell the difference between someone rating 3 stars and thinking a video (example) is good but could use some work, and someone rating 3 stars and thinking a video is average?
The like system removes the gray area that comes from 5 star rating systems; sure there's the cost of being able to fine tune one's rating, but I think it's a worth while cost.
"Meh" would be not voting at all.

Let's hope they might actually take action against future spammers, since creating a random group and spamming its announcement section with various "news" (spam for viagra, other drugs, etc) in order to rank high in the search engines is so easy.
I've seen this done on bf3 forums already and it's pathetic.
Spammers will use every opportunity to make money.
