like, if you want to play a "modern" shooter, then go play battlefield or cod. if valve wants cs:go to ever become as successful competitively as 1.6 was, then they're going to have to make it appeal to professional players and players wanting to dip their feet into the competitive world, which means they can't take away one of most important aspects of the game, which is movement.
I got a close up of the hostages in office. Kinda cool that valve had them change costumes from map to map.

I wonder if all the new "remakes" of the CSS maps are actually remakes, or did they just add onto the existing maps and make them better?

He meant directly porting the maps from CS:S and adding onto then, not completely starting from scratch.
they probably ported the source maps over, changed the textures, and added some world models.

Because CS_office doesnt look very different from the CSS original, and Valve is being lazy with the maps.

Nah, just very clean and smooth. They actually got the snow right by not making it all noisy, and the inside looks like a nice luxurious office.

Some of them are remakes wtih nothing new (Dust 2, and office) while some are more like ports of css maps with some changes (italy, inferno, train, aztec, nuke, dust 1). Personally I don't mind, and the new office I think looks nice.
