A question to anyone who breeds a lot: Does the information regarding the Pokémon get established as soon as you get the egg or when it hatches? So could you save before an egg hatch and re-load to get a different gender/personality/shiny etc.

I read somewhere it's as soon as you get the egg. Not when it hatches.
Ugh, there are no areas or trainers to level against after level 60. (Excluding Elite 4 and Gymleaders)

Yeah, I was thinking about either a growlithe or a magmar but I also have a ponyta left in my box from the pokéwalker.
