Perhaps a different type of villager? Could live in underground villages, with houses built into walls of a cave.

Nah, the witch is enough of a testificate varient for me. I want a new mob in its entirety. Maybe they'll have little cave "burrows" that have treasure or something in them, like dungeons.
I'm envisioning a green humanoid creature (but with significant differences to the villagers) as tall as the player, only a loincloth as garmented and maybe wielding a stick to represent a club to attack the player with.

Perhaps they should be guarding a ring of some sort? Something super powerful, maybe that inflicts Invisibility as long as the player is wearing it? It'd need to be balanced though, like with Wither II for as long as it's equipped.
And it needs to fill the player's view with a giant Eye of Ender.

It was more of the concept of a "cave troll" than its actual visualization I was aiming for. I'm not very artistic to come up with a completely unique physical design.
I really wish dinnerbone actually took some thought into creating the witch's texture instead of just slapping a hat and witch clothes on testificates. IMO it's seems really lazy
