Because you want to run in as a mercenary without kelver armor so the bullets don't penetrate as far.
In SOF, a favourite pastime of mine was to go to "The Shop" map using console commands. I'd then walk up to the guys sitting behind desks and throw a knives in their faces.
I would try to cut up their head as much as possible without having their headset fall off.
(The gurgles are priceless. The game is worth it just to hear that beautiful noise)
Soldier of Fortune: Payback is MUCH more gory. Too bad it sucks though.

In terms of amount of blood spilled, sure. But SOF2 beats it in every other category. The gore and dismemberment is much more complex in SOF2 than Payback. I counted all the parts you could blow off in Payback and I found out that only 9 parts could be dismembered.
Head
Left/Right arms and hands
Left/Right thighs and calves
You can't shoot the lower body and see guts hanging out like you could in the first two games. I could be wrong though. My memory is a little sketchy and I'm not exactly sure if you can shoot off the wrists, but that still proves that SOF2 is way more detailed with it's gore than in Payback.
God I've never felt worse than when playing Soldier of Fortune for the first time and nailing two civilians just trying to escape the gunfire with my shotgun... Fuckers just jumped out from around this corner yelling,"Don't shoot!"

So we're not going to see jack shit until probably next year. they estimated end of 2009 or 2010 for a release. But yeah the gore on that is going to be sick shit.
With the right mods Oblivion could get pretty gory. You could cut of a guys hands and then as he sits on his knees screaming with blood gushing from his wrists you could decapitate him and listen to him gurgling for his last breath as hes slowly dies in a pool of his own blood.
what about quake 3 arena? I remember shooting someone with a gun for 1 second and their body will be splattered and every inch of the map covered in blood/guts.

Anyone heard of Cold Winter? Its not as gorey as these but you can shot some heads, arms, and legs off. Hell I think hands and feet as well, after awhile flies start to hover the body. You can also pick up radiators and chuck them at the enemies

The game was fun as hell and was ahead of its time and deserved so much more publicity. If it was on the PC and had Bigger scale Multiplayer (More then 4 players) then it would be one of my favorate games.

Agree with SOF2. In my opinion, it's no longer enough to just have lots of blood and gibs - if you want that, get some mod that'll add 10x bloodsplats and gibs to your game.
For me, a proper damage model and realistic depictions of pain make for a much more immersive sense of "gore".
Not really got a better suggestion than that, partly because the censors generally get at any game depicting human suffering, and partly because I don't actually look for that in a game.
When I see a game where you can slice someone's stomach open, and watch them wander (or crawl, I suppose, blood loss and all) around with 3 meters of intestine dragging behind them, I'll suggest it as the goriest game ever. Bonus points if you can then strangle the person with them. :v:
Left 4 Dead 2 demo is pretty gory compared to the first. Try dead space though
