Mostly melee weapons such as knifes, baseball bats, crowbars, golf clubs etc.
There's also a few guns, though they're uncommon, and remote explosives, and some other miscellaneous weapons I can't remember about right now.

Kinda sucks how rare the shiv is though. But yesterday I got a $9000 kill with it because my target and I both ended up in prison at the same time.
Clearly he had no idea that any sort of weapon might spawn in the brig, because he was busy taking every single book off the bookshelf when I walked up and stabbed him. Kinda threw me off when I checked his dead body.
Take gnisasas and Jessey off, gifting them too.
Also if you got a copy your own way, take yourself off the list, please.
