I did this ALL THE TIME in Battlefield 1942 and Vietnam. It's crazy fun in those games, too, especially if you're playing Desert Combat. I never tried it in BF2, though.

To do it you have to make a dedicated LAN server to be able to adjust all the settings, you can even use unlocks that way. You can do it through default BF2 but you can't adjust as much.
