I personally kill Smough first because you can use him to hide from Ornstein.

After playing like 80 hours of Dark Souls, Dragon's Dogma is kicking my ass. Seriously. I'm used to slowly calculating my encounters and doing a lot of dodging/maneuvering, but doing that in DD doesn't help a whole lot since some asshole bandit comes up and insta-kills me anyways.

plus if you kill smough first you can get ornsteins armor
I always kill Smough first. He's way more annoying to fight later. His stupid Lightning Sit has double the range and damage of Ornstein's Lightning Sit, and if you're too close to him, it can easily get a one shot kill on you.
Super Smough is eight thousand times easier than Super Ornstein. Super Ornstein has hilariously fast attacks, super smough telegraphs his attacks three seconds before they hit.

Smough has more range and does more damage, though. He's a lot easier to evade, but he's way less forgiving. I'd rather go with the fast but weak opponent over the slow and strong one.

Ornstein? Yeah, he still does a shitload of damage, but he does less than Super Smough.

If you get hit by smough at all you're doing it wrong. He's super easy.

I beat every boss so far with ease, but I can't kill these fuckers.

It's incredibly easy to get hit by him. Sometimes he starts a move while you're in mid-swing with your weapon so you can't dodge right away. Maybe you need to flask from the earlier fight and he gets you that way.
I don't think there's a single boss fight in Dark Souls where you can say "If you get hit, you're doing it wrong."
Sure, there are bosses who are easy to predict and easy to dodge, but that doesn't mean you can dodge them every single time. There's a ton of room for player error.

I was in Human Form, and there were no summon signs. Not even that witch I saw when I helped someone else.

Depending on what level you are some of us might be able to help you out. The Four Kings is definitely a fight you want to co-op.

I saw summon signs by the very beginning of the New Londo area, by the elevator down from Firelink Shrine.
Around the 'courtyard' before the sorcery blacksmith guy
Check there.

Alright, I put my sign down right infront of the wooden bridge. My gamertag is SlenderJ0ker, so you know it's me.

If you're getting hit a lot by their magic attacks, get a hold of a crest shield, it'll block a large amount of the damage. Also, stay as close as possible to them; you'll take less damage if the only thing they're hitting you with is the hilt end of the blade.

I've been using The Eagle Shield, probably a bad choice. Quelaag's Furysword +4 isn't doing much, either.

I'm pretty sure they're weak to fire, so the Furysword isn't a bad choice...
Really? Barely chipped their health, but I don't really get more than 5 hits in before it kills me.
Yeah, you definitely need more magic defense. I'd recommend getting a Crest Shield and also getting the Magic Stoneplate Ring from Anor Londo if you have a free ring slot. That way they'll do a lot less damage to you.

At what vitality/endurance levels would removing the Ring of Favor and Protection be a good idea?
My vitality is 23 and my endurance is 25, and while I really want the extra ring slot, I don't want to remove it and then be kicking myself for doing it.

I usually just don't take it off period. It does take up a ring slot, but odds are that when you take it off you'll want it back on eventually. If you have another one, which you probably will soon if you haven't cleared Anor Londo yet, then go for it.
Only take off the Ring of Favor and Proection if you have a second one. It's not worth breaking one of the best things in the game just because you want another ring slot for something that's probably less useful.
