I'd have to agree with you. However I do think cannons themselves would be neat. Good defences that can be triggered by pressure plates and the sort.

If they do make sulphur then it should be chemically accurate, to make sulphuric acid in minecraft:

place sulphur block
set it on fire
add water
turns into sulphuric acid block which can be picked up in a glass bucket

yeah, smoothstone in a "circle" will make 1 cannon ball 8 damage if it's a direct hit + it destroys blocks
