Personally, I like Final Fantasy XI Online. Was quite fun. Although it did take a while to level up :x
Mabinogi. You could argue the characters are somewhat anime-inspired, but it's not an "Oriental" theme at all. It's got way more Celtic roots than anything, and is the only one that's kept my interest for more than a couple months. Some bash the cash shop, but Nexon is putting less and less focus on it, and it wouldn't kill you to spend $5-10 once to get a mount. Plus with the free NX offers, it's no big deal.

I've got the same problem. I love the idea behind MMO's, and have tried every one I can get my hands on for at least a little while, but none of them seem to really hold my interest for long. EVE Online is the closest match to what I want from an MMO, but even it has some flaws that badly hurt my opinion of it. I like the game, but at times it's insufferably boring. I think all my complaints with EVE can be attributed to a lack of interactivity in gameplay, especially combat. However, it boasts one of the most in-depth gameplay experiences of any MMO ever made when it comes to the community, economy, and player interaction. Whereas other MMO's seem to have the opposite problem. I've got high hopes for Infinity!
May I recommend Champions Online. It's currently holding my attention, and has been for 2 months. Most MMO's I play only last 3 weeks tops. This game has awesome character creation, awesome combat, and awesome pvp. Give it a go. You can find it on steam.

Guild Wars? Though probably you should wait for GW2, since getting through the campaign on GW can be very boring when you are playing with NPCs the whole way through.

If what you're looking for is a more meaningful game (by that, I mean a game where your actions have real consequences) then the games I know of are: -EVE Online -- 0.0 space is fought over by alliances, provides the very real benefit of resources, which are needed because when your ship is destroyed, it's DESTROYED. Gone. No longer exists. You need a new one. Makes warfare actually meaningful. Only game in my list considered a top-of-the-line MMO. -Darkfall Online -- MMORPG with actual player-controlled combat, guilds fight over towns, etc. I am getting very mixed reviews of the game from my friends -Mortal Online -- A lot like Darkfall, with some interesting and subtle differences. I encourage you to look both games up. One thing to note is that Mortal is clearly unfinished whereas Darkfall is finished and is now being expanded on. Both games lack serious polish. -Wurm Online -- You can actually terraform the land, dig into mountains, etc... you change the land around you to suit you. On the Wild server, you can also engage in 3-way kingdom PVP for territory. I should warn you, the developer for this game regularly forgets his brain on the bus, meaning he does some totally fucking stupid shit to the game, and it has a learning curve similar to EVE Online (but not quite as bad as Dwarf Fortress lol). -Xsyon (spelling?) -- Don't know a whole lot about it, but it's supposed to be quite a bit like Wurm, only more fluid and user friendly. Game isn't finished though, still in beta. That's all I can think of as far as games where you can affect the world around you. I would have mentioned Planetside but it's an MMOFPS (and it's kinda dead anyway)

Also, Warhammer Online (which is made by the developers of DAoC) might be worth looking into.
I've really been looking for an MMO lately. I never really liked WoW, I did play it though. I used to love WAR... I was considering playing it again; but I'm afraid that it's probably dead. There's four servers, there's no way it can still be the game I used to remember...
Seriously though, Everquest II. There was a recent population boom thanks to Sentinel's Fate, and if you subscribe during your trial, you get the game, and all but Sentinel's Fate for free. Just note, there is a cash shop type thing, but it is mostly Cosmetic, aside from the XP potions.

I also worked on making the admins start threating the community better. Left it when I noticed the admins didn't give a fuck for trolls, spammers and douches. Left a week or so after premium got put in. Payed for a month though. I might pick it up when it's cheaper or is worth the cash.
