hmmm, let me cook up something
conditions: 1 bucket of water, sun as main source of light, above ground/ tower.
Use stairs for easier movement up and down the tower :D
I made one too, but it goes underground - a bit difficult to explain with it being quite cramped.

I'm really tempted to build this to be honest. I have a 4x4 gap in my mineshaft in between my stairs. I can build it no problem!
I made a farm skyscraper for my city, 6 levels, completely lit up by loads of lightstone and torches for 24 hour grow time. Kinda causes a bit of framerate lag actually due to all the crops/torches. But totally awesome.

I like this design, but seems like the effort needed to harvest it might be worth it to make it flat and patrol the fields to keep mobs out.
Or just make sure you don't have any grass tiles without crops so they can't spawn there at all.

I made this because I didn't have enough space in my little protected base to build huge fields. So I used the waterfall-mechanic combined with torches to make my wheat grow.

This also means that the mob doesn't walk around on it. I put stairs on one side for access up, and when I want to go down, I simply use the waterfall. I might add a ladder some time.

So far this man is really the only one who expands upon the fact that crops need to be up to 4 away from water, including diagonally. OP could have had each floor much larger with no increase in water.
Edit: Top level of the tower I just made, based on this concept:

8 floors, 80 plants per floor.
I usually just build a small greenhouse for my wheat.

Off and on, about a week or so. At the time the server had block physics off, that's why the roof beams and the whole building is made of gravel. Had to change it after they got turned on though.
I might add that with so many torches and crops inside it causes framerate lag even on higher end computers.

Having crops surrounded and such like that actually reduces how much they grow. Ideal growing is in a straight line, 1 on each side.

Aah, well I can't even find a use for all the wheat I have now, so I guess that extra speed would do me little good.

My friend made his farm in a room he built underwater. He simply cut holes in the roof to create waterfalls into channels to irrigate the crops.

I find that underwater bases are actually really good for making crop locations
