GTA IV Halo (prepared for boxes) S.T.A.L.K.E.R. series
I just beat the Saboteur and I could definitely go back and play it through again. I'm going for all like 900 free-play objectives right now. Which is weird because I never care to do that kind of stuff in other games.

Metal Gear Solid 3. God, I replayed it about 20 times now and I'm still not bored.

Kid Chameleon (a Sega Megadrive/Genesis game). If you haven't played this, do it. All the different routes and stages make the replay value incredible.
Metal Gear Series, RE4, and for some reason I always want to play MW2's campaign...
I'll probably get dozens of dumbs for this, but, Crysis. I really enjoyed it.

The game that I remember playing the most times over and over is Hitman: Blood Money. There are so many ways to complete a single level. It's one of my favourite games.
