No one will agree with me but there are times in Backbreaker when it looks absolutely real and you can pretty much feel the hard hits. Otherwise RDR
I'm only speaking a little bit graphics wise mostly for an unbelievable fantastic story I'm going with Dreamfall: The longest Journey. Probably tied for my favorite game ever.
Mirrors Edge or Crysis for the first time. I think I used about 10 minutes just staring into the jungle. Also Bioshock had awesome level design. The graphics were also really good and everything felt so alive, yet dead and withered.
RDR, just beautiful.
Final Fantasy Crystal Chronicles, which was stunning, especially for the Gamecube.
Probably Shattered Horizon.
I thought Mass Effect 1/2 can look really awesome sometimes, maybe it's just me because I'm playing it. But seeing the huuuuuge ships passing by above your head, like in the retrieve Krogan mission is quite the sight.
Shadow of the Colossus had an impressive visual style. The overworld was very impressive as well. Brütal Legend's design was fucking metal. Guild Wars graphics never fail to impress me, even if it's 5 years old. Agree on Mirror's Edge.
Brutal Legend was the most inspired. Just Cause 2 was the most technically proficient. Uncharted 2 was the most realistic. This only counts the games I've played of course. Others will have different opinions.
Undoubtedly Braid, in terms of pure artistry. However, Just Cause 2's environments are stellar.
Though the graphics themselves aren't all that great, I think Dragon Age: Origins has a cool style to it and was a great successor to the baulder's gate series.

Mass Effect 2. Sometimes I would take my time with conversations just to savor the detail in the faces.

In RDR I love seeing the sun rise in Mexico coming up from behind the mountains, it looks great, and the lnadscape is all red

Also, some of the locations in the game are real! and the metro stations really do look like that! (D.C. resident speaking)
I do love SMG2's (Super Mario Galaxy 2) graphics and art style so very much.
