STALKER has some beautiful locales. I think it certainly trumps the texture quality/blur/hurrdurr by the way the levels are designed.
Mass Effect series and Legend of Zelda Wind Waker for me.
Metro 2033 took the cake for me. I [B]LOVED[/B] that game and it's visuals.

Gears of War and Oblivion made my head explode the first time I saw them.
When I first played Gears of War I was like "dayum nice normal maps, dayum nice giant spider" and then I thought "oh shit I'm so fucking bored of brown" and also it seemed like the whole gothic city design was ripped straight from Warhammer 40K artwork.
Crysis, (when it came out) Oblivion, Prince of Persia (the one from 2008)

The Elder Scrolls III: Morrowind. When I first played it and left that boat, I knew I was playing something special. Seeing the Silt Strider in the background and the distant lands just waiting to be explored all around me gave me goosebumps.

Too bad the rest of the game has dated. Still, nothing that can't be fixed by mods, and even the vanilla faces are preferable to Oblivion's shapeless hunks of flesh. Also, it's funny you said distant land, because vanilla morrowind doesn't actually have any distant land, that's why the game is so foggy. Again, though, fixable with mods. Bioshock looks great, but in all honesty, my favorite-looking game of all time is Borderlands, hands down.
I'm surprised nobody has mentioned this one yet Dead Space Not only is this game scary as hell, but it looks great. The lighting especially when you see the shadows of monsters go around corners. The sound is also really good, and the whole thing comes together and makes space look scary as hell. I second Dead Space.
