dead space does indeed look incredible. in the IGN preview for dead space 2 they were saying that dead space 2 looks even better and is one of the best looking games they've seen
Crysis with a good graphics config and STALKER with a good graphics mod.

I think Far Cry 2 has some stunning visual effects.
I remember the first time I played F.E.A.R. for the first time with my new GeForce 6200 with maximum settings and I shit my pants. So that's probably it for me.

Metro 2033. Look at the cloth in the beginning of the game, the texture resolution made me smile.
Borderlands, just because of the style it had. Mirror's Edge, also because of it's style. Borderlands was also funny as hell. As for looking realistic, well then obviously Crysis, or Far Cry 2, or whatever.

Although the game is dated, I would have to say Metroid Prime. It might not trump the graphics of today, but the atmosphere was stunning, especially when it was released in 2002. I would like to post some pics but I can't find any that aptly capture the environment.
