The Jagged Alliance 2 1.13 mod adds a shitload of weapons and gear. You'll have everything from the Kar 98 to the Rk 62 and it even features a realistic gear/inventory system to boot.

Fallout and Oblivion have a lot of weapons, but I'm not sure if it has enough to satisfy you.

sad you ruled out ArmA & ArmA 2. There are at least 1000+ guns including variants. From the M16A1 to the HK416 to the AN94, it's all there. (but you have to get mods for it.. :( )

Postal has 15 weapons (including the Gas canister and the match box) I also played it 2 years ago, was fun to piss on people and set elephants on fire.
