Vitality: 20 Attunement: 12 Endurance: 16 Strength: 20 Dexterity: 15 Resistance: 12 Intelligence: 10 Faith: 8 Started as a pyromancer and just got Laurentius back at firelink shrine, also just got a demon great hammer and a titanite chunk from snuggly if that's any help.
I just had my proudest moment in dark souls invasions. I invade a guy who spammed wrath of god on me while I was bowing, I managed to roll out before the last WoG hit me and used a humanity to heal he then summons a full havel/demon great axe phantom to which I kill after back stabbing him and slashing him when he missed his attacks, all the while the host is trying to kill me with his halbard untill I finally kill him too. Feels great to win 2 v 1s

Another quick question, which is better - the claymore or the bastard sword and are either of them worth upgrading fully or are there better swords in the near future?
It's up to you, I like the claymore because it's longer and it's 1H R2 attack is a thrusting attack.

People seem to be talking about leveling dexterity and strength to level 40 and nothing above. Does scaling stop at this level?
claymore is worth keeping imo it's the best mix of speed, damage, and before you people who insist the Bastard Sword is better, movesets. the Zweihander is also good, the Halberd is one of my favorites but I'd use the Claymore or Zweihander. The tail axe is its own special thing I have no opinion on other than HEE HEE BENDY AXE

Man, I hate being new and doing good on a boss. And then the boss pulls some sort of I-wasn't-ready-to-dodge combo that instantly kills me. Doing the gaping dragon now. All brolitare did was run up and get eaten. I did not praise the sun that day.
Summoned my first phantom, no idea what even happened - a guy spawned and started 1-hitting everything and got me past the gaping dragon with ease and about 30k souls to spare, aswell as defeating that kirk guy.

At Sen's Fortress, with a +5 Iaito and a +7 Rapier. Should I be upgrading my armor as well? I've got the souls for it, not sure if its worth it though.
IMO, weapons > levels > armor. Armor upgrades are fine, but you should probably focus on just not getting hit. That's how I play, anyway, your mileage may vary.

how do you use titanite chunks?
Questions for you folks, christmas noob here (I wanted to play the game because the story was really interesting, but I'm totally afraid of being awful at it, so I got it on sale) Is there any way to backstab with dexterity-based weapons? I'm starting out with a wanderer class and I keep trying to backstab enemies and can't seem to pull it off. I'm using a mouse after basically saying "fuck it" with the controller I have. Also I really hope there's a way to turn off automatically switching targets because I died at least twice to that shit when I'm getting surrounded by a bunch of enemies and it just switches in its own with no provocation.
